I have to say I find this hard. Lettuce leaves don’t have quite the same effect as burgers and shop salads look like a sad day. But fear not! I have finally found a simple and tasty salad recipe that will leave you ALMOST wanting it more than a burger. I said almost..
– 1 cup of quinoa
– 1/4 teaspoon of salt
– 3 cups of kale
– 1 pepper
– 1 jalapeno
– One red onion
– 1 avocado
– 1 cup of black beans
– 1/3 cup of feta cheese
– Lime juice
– Over high heat, bring to boil the quinoa. I find the perfect amount of water is about 1 and 3/4 cups per cup of quinoa
– Add the salt
– Fluff the quinoa with a fork and leave to cool
– Add the kale, red pepper, onion, black beans and lime juice to the quinoa.
– Top the salad with feta cheese and avocado
See, it is that easy. It’s Mexican themed and it’s yummy! I find that bulk making this for a couple of days helps me to make better lunch choices. It’s also filling due to the quinoa and so you don’t feel totally deprived. Try it! If you like it, there is so much you can do with quinoa and you get healthy person points..
